Baked sweet potato chip and green smoothie greetings on a beautiful Spring Day!! Well, it looks beautiful from my perch here in my second floor apartment. I’m working from home today and the afternoon slump has definitely set in. Brain fizzling, I cracked open a window, cranked the blender, and grabbed a pair of adorable, organic sweet potatoes (a gift from a thoughtful keeper) to keep me going for the rest of the day. Super easy, super healthy, and super yummy – one of my favourite combinations!
Pre-heat oven 400 degrees
Thinly slice and peel 2 organic sweet potatoes
Coat with 1 Tbsp. of Olive Oil
Sea Salt and Freshly Ground Pepper to taste
(you can also use cayenne pepper to add some spice)
Flip once and bake for approximately 20 minutes.
Drizzle with lime juice and serve.
Half of an apple
Large handful of Kale
Large handful of frozen mango pieces
1 cup water
1 tsp. hemp seed
Blend and do a pre-toast to St. Patty!
Brain unfizzled and afternoon slump defeated, I’m off to finish my work, so I can puddle dodge my way to my first completed outdoor run of the season!
